How to Cook this Easy Frittata in the Microwave

  1. Place butter in a microwave safe bowl, cover with a plate, and microwave on high for 30 seconds or until butter is melted.
  2.  To the butter, add in ham, green peppers, and spinach (or whatever ingredients you choose), microwave on high for 1 minute.
  3. Stir in beaten eggs, salt and pepper, microwave on high for 1-2 minutes or until a knife can be inserted and removed clean.
  4. Sprinkle cheese on top and microwave for an additional 15 seconds or until cheese melts.
  5. Cut into slices, top with tomato slices, and enjoy!

Absolutely! If you know you are going to be in a hurry in the morning, you can skip the second step. Simply microwave your vegetables the night before and put the covered in the fridge to use in the morning. You can microwave your vegetables and eggs together for an even quicker frittata. 

How do I make frittata in a mug? 

It is so easy! Simply half the recipe and bake it in a mug. Use two eggs instead of four and still use the suggested 1 tablespoon of butter.
