Monday morning, I’m taping a cooking segment for Daytime TV, featuring how to re-invent leftovers in Buddha Bowl recipes. 

Buddha Bowl recipes are a great way to use up every bit of veggies in the drawer, and transform leftovers with just a new sauce and a new crunchy topping.

Did you know…

Did you know that the average American family wastes up to $150 per MONTH from throwing away uneaten leftovers or unused groceries???

That’s 20 pounds of food per person that gets thrown in the garbage or the disposal!

So….today, I went shopping and bought 20 pounds of food. I wanted to see first-hand what 20 pounds of food looks like. 

  • 3 heads of broccoli
  • 2 bell peppers
  • asparagus
  • 2 apples
  • 1 pint strawberries
  • 3 bags salad mix
  • 2 massive bouquets of kale
  • 1 side of wild salmon
  • 1 package mushrooms
  • 2 zucchini
  • 1 bunch carrots
  • 2 chicken breasts
  • 1 pound shrimp
  • 2 juicy steaks

Isn’t that crazy!? 

Here’s the tricky part – I now have a feast worth of groceries to cook now.

Guess who’s having a Buddha Bowl party this week? I’ll be throwing all the proteins on the grill (maybe marinate the chicken in some kind of tangy dressing), chopping up all the vegetables, and preparing a BUDDHA BOWL BAR.

Everyone can DIY their own bowl, and mix ‘n match their own yummy sauce and fun, crunchy topping.

Who doesn’t love a good taco night? Taco nights are such a fun and easy weeknight meal to make for yourself or the whole family! What I love about making tacos is that you can double your recipe and use leftover taco meat in so many ways!  

How fun are these taco shell bowls found in our newest recipe Taco Buddha Bowls with a Creamy Chipotle Sauce. Layer your taco meat on a bed of crisp iceberg lettuce or some cilantro rice! Add in your favorite veggies like onions and peppers and create a super simple but delicious Creamy Chipotle Sauce.
